Barbecue Recipes

Pork Ribs with Quick Barbecue Sauce - Serves 4

These ribs are par-boiled before barbecuing, this will reduce the fat and ensure that they are fully cooked. 1kg (2lbs) pork ribs 

Boil the ribs in a large pan of boiling water for 10 mins. You can flavour the liquid with onion and ½ teasp. of 5 spice powder. Drain and leave in the fridge until ready.

Quick Barbecue Sauce

  • 4 tablesp. tomato ketchup
  • 1 tablesp. honey
  • 1 tablesp. wine vinegar
  • 1 tablesp. Worcestershire sauce
  • dash of Tabasco
  • salt and pepper
Pork Pitta
 
To barbecue:
Mix all the sauce ingredients together.
Cook the ribs for 6 -7 mins on each side. Brush a little of the sauce over the ribs towards the end of the cooking time.

Barbecued jumbo sausages with tomato relish - Serves 4

Meaty delicious barbecue food, guaranteed to satisfy the hungry hoards! 4 Jumbo Sausages

Simmer the sausages for 2- 3 mins in boiling water, well in advance of the barbecue, this will get rid of excess fat and reduce flare-ups.

Tomato relish

  • 1 can tomatoes, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • 1 tablesp. ginger, chopped
  • 1 tablesp. brown sugar
  • 1 tablesp. wine vinegar
  • 1 chilli, chopped
  • 1 tablesp. fish /soy sauce

 

To Cook
Simmer all the ingredients over a low heat for 20 - 30 mins., stirring every now and then. Taste for seasoning. This is a really useful relish to keep in the fridge.

To barbecue:
Cook the sausages for 5 - 6 mins each side and serve with the relish.


Pork Sticks with Noodle Salad - Serves 4

Delicious, light & tasty

Pork Sticks

  • 450g (1 lb) minced pork
  • 1 clove garlic, chopped
  • 1 teasp. ginger
  • 1 tablesp. soy/fish sauce
  • 1 tablesp. basil, chopped
  • 1 chilli, chopped
  • Salt & black pepper

Dressing

  • 1 tablesp. oil
  • 1 tablesp. sesame oil
  • 1 tablesp. dijon mustard
  • ½ tablesp. rice vinegar
  • 1 tablesp. sesame seeds, toasted
  • 1 tablesp. soy/fish sauce
  • ½ teasp. sugar
  • 1 chilli, chopped
  • 2 tablespoons basil, chopped

Noodles

  • 150g (6oz) egg noodles (soaked for 4 mins. in boiling water and drained)
To cook:
Mix all the pork stick ingredients together and shape onto 12 skewers. Brush with oil and barbecue until fully cooked, 10 -15 mins. turning occasionally. Mix the dressing together, pour over the noodles and toss well. Serve the sticks on the noodle salad.
Pork Kebabs with Lime and Nectarine Salsa Dressing - Serves 4

Any fruity salsa is delicious with pork
  • 450g (1lb) pork pieces, cut into small dice
  • 225g (8oz) vegetable selection chopped: pepper, red onion, courgette

Marinade

  • Juice of 1 lime
  • 1 clove garlic, chopped
  • 1 tablesp. oil
  • 1 tablesp. soy sauce
  • Salt and black pepper

Salsa

  • 2 nectarines, stoned and chopped
  • 1 red onion, finely chopped
  • 1 green chilli, chopped
  • juice of 1 lime
  • 1 tablesp. coriander, chopped
  • 2 tablesp. oil
  • 1 tablesp. soy sauce
Pork Pitta
 
To barbecue:
Thread the pork and vegetables on to 8 skewers. Mix the marinade ingredients together and pour it over the kebabs. Leave the kebabs in the fridge until you are ready to cook.
